Most 1200 calorie diets have sufficient amount of nutrient but it is crucial to understand the reason behind it: It is all in the genes. Beans, they are easy to grow and they are everywhere. Our body needs protein and fiber and beans fit the bill…plus, they can be cooked, mashed and mixed… pick one. Beans are such a common consumption that our body has evolved to the extent that it is able to absorb nutrients from beans more easily. It's Darwin at work, and it's something you need to be aware of if you're going to get the most out of the limited food you'll eat.
